Fall has arrived and it is time to usher in cooler weather, changing colors and crisp, juicy apples. There are so many amazing ways to bake and cook with apples – apple pie, apple crisp, apple fritters, applesauce, caramel apples, dips to serve with apple slices – I could go on and on. Today I will share with you a recipe for a baked apple pancake that was shared with me many years ago by my special aunt.  This recipe is perfect for breakfast or brunch, but can even make a unique dinner option. My kids and I adore Honeycrisp apples so that is often what I have on hand.  They are the perfect combination of sweet and crunchy for eating raw. Honeycrisp apples are more of an eating apple than a baking apple but they work just fine in this recipe. Granny Smith apples are also a nice alternative to use in this recipe as the tartness of the apple offsets the sweetness of the sugar and the syrup.

The delicious aroma of baking apples fill the kitchen as the butter begins to sizzle. Yum!

This is what the raw pancake looks like before baking. I really love cinnamon so I often sprinkle a little more over the top of the pancake before popping it into the oven.

Ans here is what the pancake looks like just out of the oven. Can’t you just smell the apples and cinnamon? Let the pancake cool slightly before cutting it into wedges and drizzling it with a touch of syrup. This dish pairs well with a side of sausage links or crispy bacon.
