R is for Recipes: Cheese Danish Squares
There is nothing like a hot cup of coffee and a delicious breakfast baked good to start a weekend morning. Today I am going to share a recipe for cheese danish squares that is so easy and so good, it is sure to become a favorite recipe for breakfast or brunch. It is also a great treat to bring in to the office to share with your colleagues. Yum! Are you ready to try it?
Recipe
Ingredients
- 2 packages of crescent rolls
- 2 8 oz blocks of cream cheese
- 3/4 cup of sugar
- 1 teaspoon of vanilla
- 1 teaspoon of lemon juice
- 1 egg yolk (reserve the egg white)
- Powdered sugar
Instructions
- Preheat oven to 350 degrees. Open one package of crescent rolls. Look for the seam and carefully unroll it into a flat sheet of dough. Press the dough into the bottom of an ungreased 9x13" glass pan.
- In a large mixing bowl, combine the cream cheese, sugar, vanilla, lemon juice and egg yolk. Blend until smooth. Pour over the crescent rolls in the pan and spread evenly with a spatula.
- Unroll the second package of crescent rolls and place it over the cream cheese filling. Using your fingers, gently press the seams of the dough closed. Whip the egg white with a fork and brush over the top layer of dough.
- Bake for 25-30 minutes or until golden brown.
- Allow the pan to cool completely.
- Sprinkle with powdered sugar and cut into squares before serving.
That’s it! So easy! You won’t be disappointed, I promise. I find that the filling blends up smoother and creamier if I use a hand mixer or stick blender, but you can also mix it by hand if your prefer. I also have a shaker with a mesh top where I store my powdered sugar. It makes dusting all kinds of treats with a sprinkle of sugar so easy. Be sure to put the powdered sugar on just before serving as it will absorb moisture over time and become more of a glaze.
I have heard of people making a similar recipe and adding a layer of fruit over the cream cheese filling before putting the top layer of dough on. Apple slices or berries could be delicious. I have never tried making this recipe with fruit only because we love these cheese danish squares just as they are so much.
