R is for Recipes: Cheese Danish Squares

There is nothing like a hot cup of coffee and a delicious breakfast baked good to start a weekend morning.  Today I am going to share a recipe for cheese danish squares that is so easy and so good, it is sure to become a favorite recipe for breakfast or brunch.  It is also a great treat to bring in to the office to share with your colleagues.  Yum!  Are you ready to try it?

That’s it! So easy! You won’t be disappointed, I promise.  I find that the filling blends up smoother and creamier if I use a hand mixer or stick blender, but you can also mix it by hand if your prefer.  I also have a shaker with a mesh top where I store my powdered sugar.  It makes dusting all kinds of treats with a sprinkle of sugar so easy.  Be sure to put the powdered sugar on just before serving as it will absorb moisture over time and become more of a glaze.

I have heard of people making a similar recipe and adding a layer of fruit over the cream cheese filling before putting the top layer of dough on.  Apple slices or berries could be delicious.  I have never tried making this recipe with fruit only because we love these cheese danish squares just as they are so much.
