R is for Recipes: Chocolate Mint Brownie Trifle

A trifle is always my “go-to” dessert for a large group. Trifles are easy to make, impressive to serve, and the variations and combinations are endless. As St. Patrick’s Day draws near, I always treat myself to a shamrock shake. That minty coolness is just so very satisfying. As I was enjoying my shake this year, I started thinking about a mint themed dessert for St. Patrick’s Day and this chocolate mint brownie trifle recipe was born. A delicious blend of chocolate, mint and brownie pieces, it is a dessert that is sure to please for your St. Patrick’s Day meal or really anytime all year long. Are you ready to learn how to make your own chocolate mint brownie trifle? Here we go:
Ingredients
- 1 9x13 inch pan of brownies, prepared and cut into bite sized pieces
- 1 5.9 oz box of instant chocolate pudding, prepared
- 1 large tub (16 oz) of whipped topping
- 1 bag of mini chocolate chips
- 1 cup of Andes mints, roughly chopped
Instructions
- Layer brownie pieces, chocolate pudding, mini chocolate chips, whipped topping and chopped mints into your trifle dish. Repeat 1-2 more times.
- Garnish the top with additional whipped cream and sprinkle with mini chocolate chips, chopped chocolate mint pieces and grated chocolate mints.
- Refrigerate at least 1-2 hour before serving. Can be made a day ahead.
Helpful Tips
- Invest in a footed trifle bowl. It makes serving a trifle so easy and elegant and can be used for some many things. I love the one I have from Pampered Chef because the pedestal is removable and it comes with a lid. I’m not sure that the Pampered Chef version is still available, but you can find other lovely trifle bowls like this one. Not only do I use my trifle bowl for desserts but it is a great way to serve green salads, pasta salads or fruit salads.
- Make your ingredients ahead a time. I often will bake the brownies and prepare the pudding a day or two ahead to save time. When it is time to put the dessert together, it takes no time at all!
- Don’t be afraid to assemble your trifle a day or two ahead of time too. I think they are often better after sitting for a day or so. The flavors really meld together. Yum!
- Experiment with your layers – use different kinds of cakes or breads, other flavors of pudding, add fruit or canned pie filling, the sky is the limit! I have made a lighter, citrus version in the springtime, a gingerbread and pumpkin version in the fall and a decadent black forest trifle using cherry pie filling.
- A traditional English trifle recipe usually calls for some kind of wine or liqueur to soak into the cake. How about adding some Bailey’s Irish Cream to this trifle recipe? Sounds good to me!
- If you would prefer your chocolate mint brownie trifle to have a more minty appearance, blend 1-2 drops of green food coloring into your whipped topping to add a little color.
