R is for Recipe: Tortellini with Spinach and Tomatoes
Are you looking for a simple meatless recipe to add to your meal planning? Do you want a clever way to add some fresh spinach to your diet? Are you tired of making plain old spaghetti with marinara? If the answer is yes to any of these questions, then this tortellini recipe is perfect for you! This easy recipe is one of my favorite ways to add a variation on pasta with sauce to our weekly menu. And when you use frozen or refrigerated tortellini, it comes together in a snap. I love to keep a bag of cheese tortellini in the freezer for a quick meal. It is delicious tossed with a little butter and Parmesan cheese, in a cold pasta salad or in this recipe with spinach and tomatoes.
Are you ready to try it? Here you go:
Ingredients
- 1/2 cup water
- 1 (14.5 oz) can of no-salt added diced tomatoes, undrained
- 2 garlic cloves, minced
- 12 oz of fresh or frozen cheese tortellini
- 2 cups of finely chopped fresh spinach, stems removed
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon coarsely ground black pepper
- 1/4 teaspoon dried basil
- 2 Tablespoons grated Parmesan cheese
Instructions
- Combine the first 3 ingredients in a large saucepan and bring to a boil. Add tortellini; cover and cook for 5 minutes, stirring occasionally. Uncover and cook 3-5 minutes more or until tortellini is done. Stir in Italian seasoning, pepper and basil. Gently add the chopped spinach and cook for 2 minutes, stirring occasionally. Remove from heat and let stand, covered, for 5 minutes. Generously sprinkle each serving with Parmesan cheese before serving.
As much as I would like to have a “meatless Monday” meal every week, my husband is a meat and potatoes kind of guy. My solution to that dilemma with this recipe is serve it with a few meatballs. I usually have a bag of frozen meatballs on hand that can be heated quickly in the microwave and served. Either store-bought or homemade meatballs work just fine and satisfies my husband’s “need” for meat. It is nice to have meatballs around to have for a quick snack or to toss in marinara sauce to make a quick meatball sandwich. Perhaps I should share some meatball recipes on the blog soon too?
I like to serve this meal with a simple tossed salad and crusty bread. Even my picky kiddos like this meal and it is a great way to get them to eat some fresh spinach.
